This soup has to be my favorite Winter comfort food. Salt pork needs to be soaked over night to remove all the excess salt. If you are like me and forget this step. You can soak for just 6 hours as long as you change the soak water out every hour. You can substitute the salt pork for a ham steak.

Serves 5

Potato Salt Pork Soup

1/2 cup butter

1/2 Yellow onion, diced

3 stocks of celery, diced

2lbs of salt pork,

5 red potatoes, peeled

1 half pint jar of peas and carrots or 1-8.5oz can of peas and carrots

1/2 celery seed

1 quart jar 032 oz) of Chicken Broth

1/2 cup of sour cream or 1 cup milk

1 cup shredded cheese, for garnish

Melt the butter on medium heat in a large soup pot. Add onion and celery to the pot. Saute tell onions are almost translucent. Meanwhile cut up the potatoes and salt pork into bite size pieces. Add the salt pork to the pot, continue to saute tell pork is cooked through. Add potato pieces and celery seed. Open the jar of peas and carrots and broth. Pour both into the pot. Stir. Bring to a boil and boil for 10 minutes or till the potatoes are cooked through. They should melt in you mouth. Lastly add the sour cream. Whisk in, making sure all the clumps have disappeared. Bring back to a boil to rewarm. Then remove from heat and serve. Garnish with your favorite shredded cheese.
